Dinner from the cupboards
I made a few trips to the grocery store this weekend, but managed to not get anything to take for lunch this week. I decided to stick it out until next weekend anyway, since I had some cans of soup, and I have bread. It's not my favorite, but I can be happy with that for a week.
However, we don't have a can opener at work, so I packed mine to use with my soup today. I didn't end up using it, since we had a Lunch and Learn, where the company provides lunch for us while we have a training. So I just left my lunch bag with my can opener in it at work.
Turns out, I need that can opener to open the can of Amy's chili I was planning to use for dinner. When I discovered this, I almost ran out to the supermarket to either buy a new can opener, or buy some eggs, which also make a delicious dinner. Sure, I have rice and pasta in the cupboard always, but I live in a society where I don't expect to eat boring stuff if I don't want to.
But on my way out the door, after I'd already locked the dogs up and everything, I decided I should be able to find something non-canned with which to make my dinner. And I did. I made some little "triscuit pizzas" that I used to love when I was a kid. (Okay, I basically still eat like a 10 year old most of the time.) Take a triscuit, put a little spaghetti sauce on it, add some shredded cheese, microwave and voila! Delicious.

Salsa dogs! Bread, microwave hotdog, add salsa. Delicious, end of week, no food in the house snack.

Milk and granola bars, fried eggs, and jam sandwiches. I’m glad you didn’t cave and buy another can opener. But if you didn’t have your out of food meal, would you have bought it?

No – I would have bought eggs and had fried eggs on toast… so delicious! Plus, then I would have 10 more eggs left from the purchase, rather than a can opener when I already own one.

Along the lines of fried eggs on toast, if you have small corn tortillas (which keep a long time in the fridge) you can melt a little butter in a pan and put a tortilla on it. Crack an egg on top, break the yolk, and spread the egg to the edges of the tortilla. Salt and pepper to taste, add a little cheese, and place a buttered tortilla on it (butter side up). Flip it over and let the other side brown while the egg finishes cooking. It’s great on its own, or with sour cream and salsa or taco sauce. Makes a nice breakfast too.
